Sincera’s coffees are primarily sourced from the Andes mountain region of Bolivia. Coffee farms at these altitudes experience extreme conditions that naturally enhance quality and flavor. Coffee from regions like Caranavi, located in La Paz city, is cultivated at elevations of 1,500–2,000+ meters, where cooler temperatures slow the coffee cherry’s maturation. This longer growing cycle allows sugars and organic acids to develop more fully, resulting in denser beans and greater complexity in the cup.
Specialty coffee refers to high-quality coffee that is evaluated by certified coffee graders and must score 80 points or higher on the Specialty Coffee Association’s 100-point scale. Unlike mass-produced coffee, specialty coffee has no major defects and is handled with precision at every stage, from the farm to the final cup.
These coffees are typically grown at higher elevations on smaller farms, where slower cherry maturation creates greater sweetness and complexity. Specialty coffee is fully traceable, often identified by its specific country, region, farm, or cooperative. The flavors—such as chocolate, fruit, caramel, or floral notes—are naturally occurring characteristics of the bean, not added flavors.
Roast level refers to how long coffee beans are roasted and greatly affects flavor.
Light roasts highlight the bean’s natural origin characteristics, often with bright acidity and fruity or floral notes.
Medium roasts balance origin flavors with caramelized sweetness, offering a smooth body and moderate acidity.
Dark roasts are bold and intense, with smoky, bittersweet flavors, lower acidity, and a heavier body. As roasts get darker, roast flavors become more prominent while origin nuances fade.

Coffee is a natural agricultural product. While it doesn’t technically spoil, its flavor and aroma gradually fade over time. Many grocery store coffees list a shelf life of up to one year from the roast date, but that timeline focuses on shelf stability rather than peak freshness. For the best flavor and aroma—especially with small-batch roasted coffee—we recommend enjoying it within six months of the roast date.
We recommend keeping your beans right in the resealable Sincera bag they arrived in. Our bags are specially designed to preserve freshness and protect the coffee from external elements better than most jars or containers. Just squeeze out the excess air, seal the bag tight, and store it in a cool, dark cabinet.
We roast in small batches to ensure consistent freshness. Once you place an order, it will ship within 1-2 business days. For example, if you order on Tuesday, your coffee will ship by Thursday at the latest.
Because our coffee is a consumable product with a limited shelf life, we are unfortunately unable to accept returns or exchanges for online orders and subscriptions except under certain conditions such as:
